Dissolve yeast, 1 tbsp of sugar and 1 tbsp of flour in ½ cup of warm water. Stir the mixture until a fine froth appears. Cover and let rise in a warm place.
Beat eggs with the essences. Mix well. Gradually add the melted fat, milk lemon zest and orange zest. Beat well after each addition.
In a bowl, mix ½ k of flour, a tsp of salt, 100g of sugar and some dried fruits (keep some of them to decorate at the end). Place this mixture onto a floured table making a crown shape. Make a well in the centre and add the yeast’s froth and the beaten eggs with fat. Knead with your hands.
Place the dough in a bowl and let rise until doubled.
Knead again and place over a paper pan. Brush the top with fat. Let rise until the dough exceeds the top edge.
Pre-heat the oven at 150ºC
Bake in oven for 45-50minutes aprox. or until a deep golden brown.
